Here’s a quick and easy recipe for you:

Ingredients:

  • 500g pork belly (cut into bite-sized pieces)
  • 200g bamboo shoot (sliced)
  • 2 tablespoons mustard oil
  • 1 large onion (sliced)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2-3 green chilies (slit)
  • 2-3 bay leaves
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh coriander leaves (for garnish)

Instructions:

  1. Prepare the Ingredients:
  • Clean and cut the pork into bite-sized pieces.
  • Slice the bamboo shoot and soak it in water if it’s dried. If using fresh bamboo shoot, ensure it’s properly cleaned and sliced.
  1. Cooking the Pork:
  • Heat the mustard oil in a deep pan or pressure cooker.
  • Add the bay leaves and cumin seeds. Let them splutter.
  • Add the sliced onions and sauté until they turn golden brown.
  • Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
  • Add the turmeric powder, red chili powder, and coriander powder. Mix well.
  1. Combine Ingredients:
  • Add the pork pieces to the pan and mix well to coat the pork with the spices.
  • Cook the pork on medium heat until it starts to brown.
  1. Cooking with Bamboo Shoot:
  • Add the bamboo shoot slices and green chilies to the pork. Mix well.
  • Add salt to taste.
  • If using a pressure cooker, add a cup of water, close the lid, and cook for 3-4 whistles. If using a deep pan, cover and cook on low heat for about 40-50 minutes or until the pork is tender, stirring occasionally. Add water as needed to prevent burning.
  1. Final Touch:
  • Once the pork is tender, open the lid and check the consistency. Let it simmer to reduce the gravy if it’s too watery.
  • Garnish with freshly chopped coriander leaves before serving.
  1. Serve:
  • Serve hot with steamed rice.

Enjoy your traditional Assamese pork with bamboo shoot!
