Savor the Flavors of Assam: Pork with Posola (Banana Stem) Delight

Ingredients

  • Pork: 500 grams, cut into pieces
  • Posola (Banana Stem): 1 medium, finely chopped
  • Onion: 2 medium, finely chopped
  • Garlic: 4 cloves, minced
  • Ginger: 1-inch piece, minced
  • Green Chilies: 2-3, slit
  • Turmeric Powder: 1/2 teaspoon
  • Red Chili Powder: 1 teaspoon
  • Coriander Powder: 1 teaspoon
  • Cumin Powder: 1/2 teaspoon
  • Garam Masala: 1/2 teaspoon
  • Oil: 2 tablespoons
  • Salt: to taste
  • Water: as needed
  • Fresh Coriander Leaves: for garnish

Instructions

Boil the Pork:

    • In a large pot, add the pork pieces and enough water to cover them.
    • Bring to a boil, then reduce heat and simmer until the pork is tender (about 30-40 minutes). Drain and set aside.

    Cook the Pork and Posola:

    • Heat oil in a large pan over medium heat.
    • Add the chopped onions and cook until golden brown.
    • Add the minced garlic, ginger, and green chilies. Sauté for a couple of minutes.
    • Stir in turmeric powder, red chili powder, coriander powder, and cumin powder. Cook for 2-3 minutes.
    • Add the boiled pork pieces and mix well. Cook for about 5 minutes.
    • Add the finely chopped banana stem (posola) and mix everything thoroughly.
    • Adjust salt to taste and cook for 15 minutes in medium heat.
    • Sprinkle garam masala and mix well.
    • Garnish with fresh coriander leaves.
    1. Serve:
    • Serve hot with steamed rice.
